make mini lemon poppy seed muffins from Vegan Brunch!
My niece helped me make these today on our third day of spring break awesomeness. I measured everything out, using all the prep bowls and a few shot glasses. Then she poured the ingredients into the bowl as directed. We had fun making these and it was a good math lesson/time killer as well. We yielded 36 mini mofo's. I think we will double the recipe next time since they are so quickly devoured.
