(e)xpress yourself

I just gave up a little over forty dollars to get myself a Tofu Xpress in time for Vegan MoFo III. Is it too early to MoFo? I don't think so. At first the price seemed a bit high, but I think it will eventually save me a lot of time and maybe a bit of money too. I will be glad to not waste as many napkins and stop worrying that I have not lined up the plates and tomato cans correctly to most effectively press the tofu. I was thinking to buy two, but let's see how the first one works out. I secretly admit I am most excited to use it to get the excess water out of defrosted frozen spinach...nerd. I have to finish making late breakfast, peace!
